1 tbsp olive oil
This rich, creamy Alfredo-inspired soup combines all the classic lasagna flavors with a deliciously comforting twist!
1 small onion, diced
3 cloves garlic, minced
1 lb Italian sausage (mild or hot, as preferred)
5 cups chicken or vegetable broth
1 can (14 oz) crushed tomatoes
8 oz lasagna noodles, broken into pieces
1 cup heavy cream
1 cup grated Parmesan cheese
1 ½ cups shredded mozzarella cheese
Salt and pepper, to taste
Fresh basil or parsley for garnish
Instructions:
Sauté Onion & Garlic: Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute.Cook the Sausage: Add the Italian sausage to the pot and cook until browned, breaking it up as it cooks.
Add Broth & Tomatoes: Pour in the broth and crushed tomatoes, stirring well. Bring the soup to a simmer.
Cook the Noodles: Add the broken lasagna noodles to the pot. Cook until the noodles are al dente, about 10-12 minutes.
Add Cream & Cheese: Reduce heat to low. Stir in the heavy cream, Parmesan, and mozzarella cheese until melted and creamy. Season with salt and pepper to taste.
Serve: Ladle the soup into bowls, garnishing with fresh basil or parsley if desired. Enjoy warm!
